Ingredients
- 500g Cherry Tomatoes
- 75g diced red onion
- 60ml white wine vinegar
- 1 1/2 tbls good olive oil
- ¼ tbls salt
- Twist of black pepper
- A handful of basil and flat parsley leaves
- 175g Feta cheese
Instructions
- Cut the tomatoes in half and place in a bowl.
- Add the onion, vinegar, olive oil, salt, pepper, basil and parsley and toss well.
- Dice the feta into half inch cubes, crumbling it as little as possible. Gently fold it into the salad.
- Serve at room temperature.
