Multicultural Culinary Combinations Ireland is a changed country. It is now made up of many new cultures, soon to be a wonderful melting pot, sorry about the pun. And these cultures bring their food and did you know that so many dishes are vegan? Happy Days! Minestrone, is a big bean, vegetable and pasta stew. A one pot dish that needs very little except perhaps some nice crispy bread. Though, we have grown to like bread, especially that sourdough stuff, a saucy stew in Ireland is often accompanied by mashed potato. So, the other day, as I started to prepare the minestrone the idea of culcannon came to mind. There was a bit of cabbage in the vegetable drawer, and we always have potatoes and onions on hand, so culcannon it would be. A lovely ‘marriage’ of two cultures. Serve in a deep plate or shallow bowl, with a nice ladle of the minestrone and a good measure of the colcannon. I eat a little of the two with each spoonful. Bon appétit ! The Jalapeño peppers can be quite hot, but once you remove the seeds and they are cooked, they are actually mild and very flavoursome. Homemade sour cream: 100 ml of vegan pouring cream, 1 to 2 tbsp of Natural Hungry Soul cream cheese, juice of half a lemon, chopped fresh chives. Bon appétit Jacques This recipe is not my own. It came to me via my niece, another crazy vegan food lover. She sent me an Instagram reel by Sam of @nomeatdisco. I then passed it on to my daughter, who knew exactly what to do. By the time I got home, she already had two trays of aubergine slices nicely weeping. In no time they were being charred in the pan. I quickly made the Harissa and maple syrup dressing and the Tahini sauce. This is now the fourth time in a couple of weeks that I have made this recipe. I must say, I LOVE AUBERGINE, and this recipe is soooo good. The sweetened harissa spice and the tahini are just 100% North African, and just so easy! Jacques Brennan The Hungry Soul Winter Pickle Soup Polish 'Cucumber' Soup I was often asked to make this soup around Christmas time, so it has now become one of our family’s winter food traditions. A day or two before the big day, lots of preparations and this is quickly made, gives one energy, and warms the insides nicely. When I travel, my great interest is always the local food. If you express interest in someone’s culinary culture, they are very happy to share it with you. This soup was made for me, and I left with a satiated smile and the recipe. As is my way, as soon as I was home, I made it for the family, and it was an immediate success. Of course, I needed to make a few changes. Instead of the traditional cream or sour cream, I used the amazingly tasty Hungry Soul, vegan cream cheese. I was asked to second and third helpings… Dill is a fresh herb that is good in everything – salads, pickles, potatoes and of course soups. Makes Enough for 4 INGREDIENTS

If you want a good Vegan Christmas Dish just google one, there are many online, find one that is simple, they are usually the best, at least I think so... But it is also the time when we are most busy. So here is a bit of help. Coming home late from work, I was wondering what to cook. Someone in the house suggested pasta, and of course pasta is quick and easy. But what about the sauce… Think minutes - in the time that your pasta is cooked ( 10 minutes max. ) your sauce will be ready. Made with beets, carrots and cabbage, all ingredients we have in plenty at this time of the year. As long as I can remember Borscht was our family’s Christmas dinner starter. A Russian friend of the family would join us at Christmas and she brought this soup with her every year. A true food memory. The key to making it authentically Russian or Polish or Ukrainian is fresh dill. In many dishes, one ingredient just makes it and often it is fresh herbs. Make Enough for 4 INGREDIENTS

Jacques Brennan Recently I have been experimenting with making ‘ fried’ dishes without the use of oil. A fry without the use of oil may seem kind of strange, but there is more and more awareness of how fats, even plant-based fats such as oils should be consumed in moderation if at all. I remember when selling my book at a fair, one or two people asked me if the book contained oil-free recipes. I used to love a nice dollop or two of olive oil and just about anything, but it may not be such a good idea. I did not think it could be done, but I was pleasantly surprised. The idea is to caramelize the onion using water instead of oil, with a little patience it actually works, and the final result is quite tasty. Recipe Makes enough for 4 good servings. INGREDIENTS
